About Dunton Hot Springs

Dunton Hot Springs is a small luxury resort nestled deep in the San Juan Mountains of the Colorado Rockies. This perfectly restored ghost town thrives on contradictions; hand- hewn log cabins exquisitely furnished, a life-worn saloon serving food of startling quality, lung torturing trails followed by pampering massages, sensuous hot springs beneath shimmering snow banks.

The success candidate will

• Have 1 year plus experience in the same role
• Comfortable with computing basic mathematical calculations
• Has an excellent record of kitchen and staff management with good communication skills
• Executes for the Executive Chef in planning and directing food preparation when necessary
• Be responsible for managing and training kitchen staff
• Ensures that the kitchen operates in a timely way that meets our quality standards
• Fine dining experience is preferable
• Work effectively as part of a team

The roll includes

The ideal candidate will not only be creating exceptional and unforgettable culinary experiences but they will have the ability to lead pastry cooks and stewards, partner with the Executive Chef and ensure all health and safety requirements are in place.

• Maintain knowledge of cutting edge pastry technique, local market offerings
• Strict adherence to state sanitation/health regulations and resort requirements
• Maintain knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, safely and properly.
• Meet with the Executive Chef to review assignments, anticipated business levels, menus.
• Develop all menus for pastry and bakery operations in all outlets, including amenity programs.
• Prioritize all mise en place and tasks and ensure they are completed in a timely and correct fashion.
• Ensure that all orders are properly received, inspected and put away in an orderly and timely manner.
• Inspect and maintain the cleanliness and organization of the kitchen and all workstations. Rectify any deficiencies.
• Develop, organize and maintain production via prep lists and/or production lists.
• Maintain proper storage of all products as specified by the Health Department, and Executive Chef and resort requirements.
• Direct and assist stewards.
• Minimize waste and maintain controls in product utilization to attain forecasted food cost.
• Breakdown workstation and complete closing duties according to department standards
• A car is required to work at Dunton due to the remote location. 4WD or AWD recommended.

Pay: $40,000.00 - $50,000.00 per year
