POSITION SUMMARY
The incumbent will be responsible for overseeing all aspects of the food service operations, including Star Catering, while ensuring strict adherence to kosher dietary laws and guidelines. The role will encompass menu planning, food production, quality control, procurement, and staff management.
ESSENTIAL JOB FUNCTIONS
· Supervisory responsibilities: Manage staff including, but not limited to:
o Recruit, interview, hire, and train new staff within the department.
o Oversee the day-to-day workflow of the department.
o Provide constructive and timely performance evaluations.
o Provide coaching and mentorship to staff.
o Handle discipline and termination of employees as needed and in accordance with JFO policy.
· Design and develop menus that meet the dietary needs and preferences of the residents and catering customers while adhering to kosher laws and guidelines.
· Responsible for managing all aspects of catering operations, from planning, costing, and budgeting, to execution and client management.
· Oversee the food production process to ensure that all meals are prepared in accordance with kosher standards and federal/state regulations.
· Maintain strict control over ingredients, preparation methods, and equipment to prevent any cross-contamination with non-kosher items.
· Implement and enforce rigorous food safety and sanitation practices to ensure the highest level of cleanliness and hygiene.
· Implement and enforce effective processes, procedures, and work environment to ensure the safety of self and others in compliance with OSHA standards.
· Source and procure kosher-certified ingredients, supplies, and equipment from reliable vendors.
· Manage inventory levels, ensuring an adequate supply of kosher ingredients while minimizing waste and controlling costs.
· Maintain open and effective communication channels with residents and their families regarding dietary preferences, special requests, and any concerns related to kosher practices.
· Collaborate with the Executive Director, Dietician, Mashgiach, vendors, suppliers, and others as needed.
· Responsible for adherence to department budget.
· Reliable and predictable attendance.
· Perform other related duties as assigned.
Other Requirements
The person in this position may be subject to exposure to infectious waste, diseases, etc.; including exposure to blood-borne pathogens including the AIDS and Hepatitis B viruses.
This position will require some time out of the office for catering events and training that occur outside of a traditional work schedule.
Knowledge/Skills/Abilities
· Knowledgeable and ability to enforce all state and federal requirements for skilled nursing care food service and environmental service regulations.
· Demonstrated proficiency with Microsoft Office Suite or related software.
· Possess excellent interpersonal, verbal and written communication skills.
· Able to handle competing priorities and deadlines by demonstrating attention to detail, and excellent time management and organizational skills.
· Ability to act with integrity, professionalism, and confidentiality.
· Works effectively and collaboratively in a team environment or independently as required.
· Able to navigate potentially hostile and emotionally upset residents, family members, personnel, and visitors with diplomacy and professionalism.
· Must maintain valid driver’s license and automobile insurance.
· Ability to pass a background check and drug screen.
Education and Experience
· Bachelor’s Degree in Foods and Nutrition, Certified Dietary Manager, Certified Food Services Director, or other qualification as required by Nebraska State Regulation 175 NAC 12.
· Extensive knowledge and understanding of kosher dietary laws and guidelines.
· Previous experience in managing kosher food services in a senior living or healthcare setting is highly desirable.
· Strong culinary background with expertise in menu planning, food production, and quality control.
· Knowledge of food safety regulations and best practices.
· Familiarity with kosher certification agencies and procedures.
· Proficiency in managing budgets and controlling costs.
· Flexibility to adapt to changing needs and preferences of residents and/or customers.
· Experience in a long-term care facility preferred.
· Knowledge of cleaning methods, materials, and equipment.
