Summary

The Banquet Captain supervises and assists in the service of banquet functions. Serve guests in a friendly, professional manner according to hotel standards working under the direction of the Banquet Manager.

Essential Job Functions

• Oversee the set-up of functions including checking of the physical layout of the room, providing the servers with the proper set-up information and posts updated function sheets in the banquet kitchen
• Conduct pre-service meetings with staff, attend monthly department meetings and in the absence of the banquet manager attend weekly event order meeting
• Oversee the service of the function assigned by the Banquet Manager to insure the success of the function and staff adherence to all service rules
• Meet individual hosts and make him / herself accessible to the host for any need that may arise
• Complete china, glass and silver requisitions
• Properly close all banquet checks and complete the captain’s logbook at the completion of the function
• Oversee the clean-up of all functions and insuring the proper removal and storage of hotel linen and skirting
• Report all incidents to the Banquet Manager
• Prepare and post daily room assignments for servers including specific times for set-up and service
• Prepare daily payroll statistical reports
• Oversee proper clean up, handling and storage of all props and specialty china
• Assist the Banquet Manager in the annual performance evaluations of the banquet servers
• Respond properly in any hotel emergency or safety situation
• Perform other tasks or projects as assigned by hotel management and staff
• Ensure the proper care, security and maintenance of hotel equipment through proper supervision of service personnel
• Constantly monitor the staff’s appearance, attitude and degree of professionalism.
• Responsible for assisting all team members in organization of kitchen items, to include, dry goods, kitchen equipment, storage containers, cleaning supplies and proper rotation and organization of all food deliveries
• Complete tasks and projects delegated by your Supervisor and assist other departments as business volumes and staff levels demand
• Report to work in a neatly groomed and acceptable manner as outlined in the employee handbook and departmental rules
• Report to shift on time
• Enforce and comply with all policies and procedures for the Food and Beverage Department, Limelight Hotels and the Aspen One

Qualifications

• High School Diploma or equivalent preferred
• Three years in food and beverage service required
• Wine knowledge, knowledge of food and cooking methods, ability to work well with people, strong organization and supervisory skills

Supervision Given and Received

Given : Exercises direct supervision over Banquet staff. Responsibilities include, but are not limited to, frequent and detailed review of work, training, planning, assigning, and directing work;

appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Received : Works under direct supervision of the Banquet Manager. Tasks are assigned according to specific procedures, and work is checked frequently.

Instruction, advice and assistance are readily available.

• Ability to reach, crouch, kneel, stand, walk or be on your feet for extended periods of time
• Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces
• Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance
