Serve table completely, serving all sides and accompaniments in a timely manner according to all Standards and Sequence of Service. - Know the ingredients of each menu item.
- Know the potential allergens (i.e., nuts, dairy, seafood, fish, gluten, etc.) in each menu item – as well as if the dish can be modified and/or the allergens omitted for a Guest with a specific allergy. Know the portion size of each item.
- Know the plating standards for each item.
- Know the finish work for each item.
