The Kitchen Captain at our food processing center plays a crucial role in ensuring the quality, efficiency, and innovation of our food products. This position primarily involves product testing, streamlining processes, providing improvement recommendations, creating recipes, and supporting the development of new items, particularly in the dim sum and central kitchen departments. As a
Kitchen Captain, you will be actively engaged in hands-on tasks, including testing new product mixtures and operating filling mixers, proofers, steamers, kettles, and fryers. You will also be responsible for conducting research and development projects. We are seeking a detail-oriented individual with expertise in Chinese cuisine, specifically in Northern Chinese Style Dimsum, such as
Pork Steam Buns, Egg Rolls, and Chinese Meatballs.
Responsibilities:
- Conduct product testing of existing and new food items to ensure quality and consistency.
- Streamline processes within the food processing center, identifying areas for improvement and making recommendations to enhance efficiency and productivity.
- Develop and create new recipes for various food products, incorporating innovation and market trends.
- Operate and maintain kitchen equipment to produce high-quality food items, including filling mixers, proofers, steamers, kettles, and fryers.
- Collaborate with the team to support research and development projects, bringing new ideas and flavors to our product range.
- Monitor inventory levels of ingredients and supplies, placing orders as necessary to maintain stock availability.
- Train and mentor junior kitchen staff, providing guidance on proper food preparation techniques, safety procedures, and sanitation practices.
- Maintain a clean and organized work environment, following food safety and hygiene standards.
- Stay updated with industry trends, new ingredients, and cooking techniques to continually improve culinary skills and keep the company at the forefront of innovation.
- Perform other duties as assigned by management.
Qualification:
- A High School Diploma or equivalent is preferred.
- Demonstrated experience as a Kitchen Chef or in a similar culinary role is required, preferably with expertise in Chinese cuisines and Northern Chinese Style Dimsum, such as Pork Steam Buns, Egg Rolls, and Chinese Meatballs.
- Food safety certification and knowledge of relevant health and safety regulations is required.
- Flexibility to adapt to changing priorities and work schedules.
- Strong understanding of product testing procedures and quality control measures.
- Knowledge of food processing techniques, equipment operation, and recipe creation.
- Excellent organizational and problem-solving skills to streamline processes and implement improvements effectively.
- Ability to multitask and prioritize tasks in a fast-paced environment.
- Creativity and passion for culinary innovation, with a keen eye for detail.
- Bilingual English/Mandarin or English/ Spanish is preferred.
- Authorized to work in the United States without sponsorship.
Physical Requirements:
This job may require standing or walking for extended periods of time, lifting up to 50 pounds, and performing repetitive motions.
Working Conditions:
This job is performed in a production environment that may have exposure to heat, noise, and other environmental factors associated with food production.
The position will work in a commercial kitchen environment and will be required to follow food safety and sanitation guidelines.

Compensation:
The pay range for this job is between $25 and $28 per hour. This is a general guideline only and not a guarantee of compensation or salary.
