You do this by expertly planning and implementing the serving details for the event. You will oversee and hold responsibility for: Guiding, directing, and motivating banquet staff; Directing your team in setting up tables correctly and uniformly in assigned area(s) using clean pressed linen, clean unspotted silverware, clean china with no chips or cracks, clean unspotted glassware; Confirming the table complements (salt, pepper, sugar, breadbaskets, etc.) have been properly cleaned and filled; Planning the serving order and orchestrating its completion in a timely, quiet and courteous manner; Ensuring the servers are ready to serve the meal upon its preparation; Managing set-ups, serves and/or break downs of coffee breaks, receptions, other special functions as assigned; Maintaining professional and prompt communication with the guest contact person for guest needs; When needed, performing the job of a Banquet Associate and Banquet Bartender; Understanding and staying aware of departmental forecasting to ensure appropriate staffing levels; Assisting the Banquet Manager with scheduling, training staff, and inventory; Ensuring service standards are being followed and taking corrective action when they are not; Following and modeling all company safety and security policies and procedures; Reporting accidents, injuries and unsafe work conditions to management; and Performing all other work as required to complete the primary purpose of the position. Required Prior Experience: Six months of banquet food service experience Six months banquet or similar food/guest service leadership role Preferred Prior Experience: Prior banquet captain role Required Licenses/ Certification: Food Safety certificate or complete training during initial 90 days. Alcohol certification or complete training during initial 90 days. Physical: Ability to lift, pull and push up to 50 pounds regularly. Ability to bend and squat repeatedly.
