Job Description:
Responsible for the Food and Beverage operation of the Casino. Oversee inventory and order food and related products. Ultimately responsible for the level of service, quality of product and full compliance with all local, state and federal laws as well as company policies and procedures.
- Prepare and submit annual Food and Beverage budget to GM and set objectives for all direct reports.

Plan and manage all Food and Beverage operations and exceed expectations of Guests.

Responsible for the recruitment, selection, orientation, training and engagement of all F&B personnel.

Frequently evaluate menu, financial performance and Guest Service metrics to ensure quality and service standards are maintained. Make recommendations to General Manager.

Conduct regular inspection of front and back of house F&B areas to ensure compliance with all relevant health, safety and sanitation standards.

Ensure all Alcohol Awareness training and compliance is carried out (including R.A.M.P.) to company standards.

Manage the purchasing, receiving, storing and rotation of all F&B products in line with company standards.

Prepare the weekly labor schedule and post according to company policy.

Design, implement and regularly update a menu that is in line with Guest expectations and F&B budget.

Regularly assess the standard of food products in terms of cost and quality.

Ensure all F&B staff are aware of all marketing, promotional and Guest development events and promotions and are able to answer questions and promote accordingly.

All POS systems must be followed.

Ensure staff costs, food costs and fixed costs are in line with the budget.

Review all F&B social media posts and refer to GM for response.

Maintain an in-depth product and pricing knowledge of all liquors, wines, beers and soft drinks.

Receive invoices in inventory management system and send to Corporate Food and Beverage Accounting Team.

Perform monthly physical inventories under direction of Corporate Food and Beverage Controller.

Assist with identification and implementation of process efficiencies and internal controls under direction of Corporate Food and Beverage Controller.

Help maintain accuracy of Micros System data.

Perform accounting and analysis as requested by the Corporate Food and Beverage Controller.

Required Experience:
Minimum of three years’ experience as a Food and Beverage Manager and experience in similar position. Bachelor’s degree in hospitality management or a related field.-
Experience with and knowledge of all front and back of the house positions with the ability to quickly assess service situations. Extensive knowledge on the comprehension of financial reporting and budgets.

Familiarity of liquors, wines, wine service, beers, and selling techniques with the ability to pass knowledge on to team members.

Knowledge of Food and Beverage Accounting principles for conducting inventories, labor controls, menu engineering, and financial reporting.

Ability to train and evaluate Team Members in the processes of food and beverage operations

Ability to use Microsoft Office and have a proficiency in the computerized Micros and POS systems.

Proven managerial problem-solving and critical thinking skills in identifying and prioritizing opportunities to drive measurable results.

Experience in up-scale dining, quick service concepts and casual dining operations.

Ability to maintain a valid PGCB license
