**Overview:**
Big South Catering Company/Rigsby’s Commissary Kitchen is a commercial kitchen that provides fresh from scratch foods to our four Rigsby’s Smoked Burgers & Wings restaurants and The Vintage Toast Venue. The purpose of the commissary kitchen is to provide high quality, chef inspired foods in a timely and consistent manner. This helps to cut down on labor costs in the restaurants and deliver a very consistent product that patrons can count on.
We are seeking a skilled Roundsman to join our team. The Roundsman will play a crucial role in supporting the kitchen operations and ensuring the smooth flow of culinary activities.
Primary Responsibilities:
· Completes all assigned prep work as assigned by Executive/Sous Chef/Kitchen Lead.
· Maintains a clean and organized workstation, product quality and cook time standards.
· Prepares all items/recipes according to Big South Catering Company’s Recipes and specifications.
· Properly cool, portion and package products for delivery to all Locations following all DHEC approved HACCP Plans.
Specific Functions and Duties:
· Completes all assigned prep work, packaging, and cleaning.
· Practices sanitary and safe food handling at all times.
· Cleans and sanitizes the work area before, during and after shift.
· Completes assigned daily and weekly cleaning projects.
· Ensures that all equipment operates properly.
· Ensures that all utensils, smallwares and equipment is clean and ready to use.
· Operates dishwashing machine properly.
· Assists in emptying trash/trash runs.
· Assists in cleaning kitchen and dish areas. - Assist in the preparation and production of meals in accordance with set recipes and portion sizes.
- Adhere to food safety guidelines and regulations at all times.
**Qualifications:**
· Must be 18years old and be able to work effectively in a fast-paced restaurant environment.
· Must be able to attend all regularly scheduled meetings.
· Able to place plates, utensils, pans and cases on high and low shelves.
· Reading, writing and verbal communication skills required.
· Capable of using knives, slicing equipment and other food preparation equipment.
· Understands the dress code and obtains a suitable uniform.
· May perform other duties as necessary or as directed by Executive Chef/Sous Chef/Kitchen Lead.
PHYSICAL DEMANDS OF THE JOB: (# of Hours per Day below may vary)
· Walk- Up to 12 Hours per Day
· Stand- Up to 12 Hours per Day
· Mobility required during the entire shift.
