    The Executive Chef is responsible for general administration and operations of the culinary department.     The Executive Chef shall provide managerial oversight of banquet service, special events, quick service restaurant, casual dining restaurant, fine dining restaurant, and bowling snack bar. Front-of-house operations shall be assigned to the Director of Food and Beverage.  The Executive Chef shall ensure a productive and harmonious working relationship with the Director of Operations and the Food and Beverage Director.

    Inter-Departmental Teamwork

    • Works with the Director of Operations to conduct detailed analysis and assessment of key metrics.
    • Works effectively with senior culinary staff to establish specific goals and objectives for each chef’s area of responsibility. 
    • The Director shall collaborate with the Marketing Director on the timely creation and trafficking of promotional materials. 
    • The Director shall assist the Player Development Department in creating and executing special events for premium guests. 

     

    Major Responsibilities/Activities:

    • Conducts objective staff assessments for both workplace skills and behaviors to assign staff to the most effective job position and duties.
    • Operates the culinary operation efficiently.  Specifically, avoids over-staffing, under-utilization of on-duty personnel, schedules efficiently, minimizes food waste, reduces food costs by setting and adhering to product specifications.
    • Coordinates with purchasing and uses due diligence in buying food products always seeking specials and sales that would lower the food cost.  
    • Provide regular training specifically created to benefit the needs of the culinary department through; 1) providing a matrix tracking the progress of each individual 2) ensuring training was understood and skills taught have been learned are consistently demonstrated on the job 3) cross-training cooks to other outlets. [must understand not to create a culinary school, rather skills needed for each outlet]
    • Ensures food preparation and delivery systems are efficient and consistent. Food is required to be prepared consistently and to specifications within a pre-designated time range. These times should be regularly monitored.
    • Ensures food all staff is adequately certified and trained in food safety procedures.
    • Regularly conduct and document food safety and sanitation inspections to ensure 24/7/365 compliance.
    • Ensures professional conduct in kitchens and enforces lapses, leads by example. 
    • Create effective menus taking into consideration complexity of production, purchasing efficiency, consistency of product, and consumer acceptance. Is willing to outsource products, use pre-made / pre-cooked / pre-mix products when cost / benefit analysis supports implementation. 
    • Get input from the Directors of FnB, Operations, and the General Manager on menu creation. (The General Manager shall have final approval authority of all menus)
    • Resolve conflict situations with employees, customers, or in-house situations.
    • Coordinated with assigned Employee Relations Manager to initiate personnel actions such as hiring; promotions; transfers; discharges; disciplinary measures; performance evaluations; and training of new and current team members.
    • Executes with efficiency and consistency the directives given by the Director of Food & Beverage.
    • Regularly notifies and communicates to the Director of Food & Beverage on the status of operations to include but not limited to; expenses, personnel matters, training, inventory, breakage, waste and other like relevant operational activities.
    • Oversees the proper documentation of profit and loss ensuring that all critical control points are met and resolved.
    • Oversees the professional development of culinary team tracking progress to be documented. 
    • Maintains food costs through rising market variances.
    • Researches and implements current and new industry trends in food service.
    • Meets regularly with purchasing buyers for pricing, ordering and product information.
    • Outlines policies and procedures for Food and Beverage employees.
    • Performs other duties as assigned.

     

    Minimum Requirements:

    • Preference is given to qualified Santa Ana Tribal members.
    • High school diploma or GED. Culinary Arts degree preferred and five to seven years of food and beverage senior management experience with operations equal to or larger than SASCH.  
    • Obtain and maintain a New Mexico food handlers’ card.
    • Thorough knowledge of applicable regulations pertaining to food safety.
    • Must be available to work various shifts including days, evenings, weekends, and Holidays. 
    • Effective written and verbal communication skills including the ability to successfully communicate with multiple levels of management.
    • Must be able to read, write, speak, and understand English.
    • Professional appearance.
    • Bi-lingual and multi-cultural experience preferred.

    • A smartphone capable of running company applications and communication systems is required. If a smartphone is not provided by the company, a candidate or employee may be provided a smartphone of the company’s choice, through a payroll deduction program.
    • All employees are required to proficiently use a smartphone for company applications, email, and text.
    • Must be able to obtain and maintain a Pueblo of Santa Ana Gaming and Regulatory Commission key gaming license.
