Ensure all food is of high standardsof quality and presentation Superviseentire kitchen team and oversees hiring, training, performance evaluations and development Schedules kitchen team, maintainingadequate staffing levels while adhering tolabor standards and guidelines Plans meals and develops menus for the hotel Assists the F&B Managerand Sales team with banquets, meetingsand events Greets all guests and associates in a friendly manner Daily/Weekly/Monthly requisitions for food and equipment. Ensuring proper controls and par levels of products are inspected Orders all food and equipment as needed Maintains knowledge of kitchen budget and food costs. Assistsin the planningof the annual operating budget Trains and re-trains team to ensure that new hires are set up for success and current team is consistent in their approach Ensure that each day has prepared and organized stations and all food necessary is prepared according to prep sheets. This includes making meal service is started with adequate sauces, soups, setupand any other items associated with the daily menu. Thorough knowledge of menus, recipes, preparationand presentation standards. Weigh, measureand mix ingredients according to recipes using various kitchen utensils and equipment. Ensures that all productisproper labels and datesand that teamis rotating using first in, first out standards. Make sure that all perishables are kept at proper temperatures. Ensure work areas are clean, safeand organized. Maintain high standard of personal hygiene in compliance with state, countyand company policy. Establish and maintaingood communications and team workwith fellow employees and other departments within the hotel. Have knowledge of and assistin emergency procedures as required Assistother departments when needed to ensure world class service to guests. Adhereto all company policies, proceduresand business ethic codes Other duties as assigned Knowledge, Skillsand Ability Culinary degree 5 years’ experience in Chef or Sous Chef role ServSafe certification Proven dedication to customer service Exude a professional appearance and manner Ability to work in a fast paced environment Proven leadership skills and qualities Proficient in PowerPoint, Excel and Word Excellent written and oral communication skills Preferred Skills Bilingual Physical Demands and Work Environment Ability to lift, move, pushand pull equipment or boxes in excess of40lbs. Should be able to handle outdoor temperatures for a reasonable period of time. Must be able to move around campus which includes gym, turf, fields, etc. Ability to work flexible hours to include nights, weekends and holidays is required
