Executive Chef - Casino is responsible for all of the operations of the kitchens. Creates and updates menus to maximize profits and minimize loss. Being an Executive Chef - Casino tests and develops recipes. Monitors customer satisfaction. Additionally, Executive Chef - Casino maintains inventory of kitchen supplies and food. Ensures that food and facilities meet all governmental regulations. May require a bachelor's degree in area of specialty. Typically reports to a top management. The Executive Chef - Casino manages subordinate staff in the day-to-day performance of their jobs. True first level manager. Ensures that project/department milestones/goals are met and adhering to approved budgets. Has full authority for personnel actions. To be an Executive Chef - Casino typically requires 5 years experience in the related area as an individual contributor. 1 - 3 years supervisory experience may be required.     • Minimum 5 years’ experience as a chef in a high-volume restaurant, creating high quality food products.
    • Culinary degree preferred.

    License Requirements:

    • Must secure appropriate RI mandated gaming licenses.
    • FoodSafe Certified.

    Essential Job Functions:

    • Schedule staff, both kitchen and dishroom, create daily specials menu.
    • Calculation of inventory requirements.
    • Oversee cleanliness of kitchen, refrigeration, dishroom and all other kitchen support areas.
    • Communication with front of house staff.
    • Ordering of all food and supplies needed, as well as costs.
    • Hiring, firing and supervision of necessary personnel.
    • Knowledge and compliance of all RI food codes and HACCP laws.
    • Ensure wait staff and kitchen staff fully understand all items for sale each day, while ensuring security of kitchen after hours.
    • Ensure all items leaving kitchen are charged for or brought to the Food Service General Kitchen Manager’s attention.
    • Responsible for kitchen and all support staff during all hours of operation.

     

    Physical/Mental Requirements:

    • Continuous walking, talking, bending, and reaching during operating hours
    • Frequently testing food to ensure it is up to standard.
    • Ability to lift up to 25 lbs.

    Working Conditions:

    • Kitchen area, and casino floor.
    • Working in moderate to loud noise levels in kitchen areas, as well as moving through the casino floor.
