    Summary of Functions

    To supervise and coordinate all back of the house activities as it relates to the culinary department.  To provide superior quality, preparation, presentation, of food and guest service at NQC.

    Essential Duties and Responsibilities

    • Ensures compliance with the Kalispel Tribe of Indians- Internal Controls, and Northern Quest Policies and Procedures.
    • Responsible for development and implementation of all menus for NQRC’s Four Diamond restaurant; Masselow’s, as well as the Lounge at Masselow’s and Room Service.
    • Responsible for maintaining all food and beverage standards of a Four Diamond facility as dictated by AAA requirements.
    • Responsible for a full-service venue.
    • Monitors daily production of food in venue kitchen and supporting areas.
    • Responsible for labor forecasting and kitchen scheduling.  Make adjustment as needed to meet budgeted percentages.  Schedules according to business levels.
    • Test new products and recipes as trends and business levels dictate.
    • Responsible for all food requisitions, ensuring quality, and menu specifications through use of standard operating procedures.
    • Review food and labor costs of the entire food operation with venue General Manager and Director of Food and Beverage.
    • Continually review kitchen operations for improvements in the food production area.
    • Observes workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking garnishing and sizes of portions are as prescribed.
    • Gives instructions to culinary personnel in fine points of cooking, as well as providing training to service team on product knowledge.
    • Follows all food safety and sanitation guidelines set for by the FDA to ensure HACCP.
    • Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
    • Attends regularly scheduled meetings and seminars as necessary.
    • Ensure control/protection of company assets.
    • Responsible for maintaining a good attendance record.
    • May be required to be a panelist for the Internal Review Hearings.
    • Will be required to perform in off property functions by representing NQR&C in charitable events, and media opportunities.

    Supervisory Responsibilities

    • Directly supervises the entire culinary team in the Venue (Sous Chef, Cook II, cook I, stewards).
    • Carries out supervisory responsibilities in accordance with the organization’s policies and applicable law. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Reports directly to the Venue General Manager.

    Education

    • Culinary Arts/associate degree (A.A.) preferred.

    Experience

    • Ten years related experience and/or training; or equivalent combination of education and experience.
    • Five years supervisory experience required.  Sous chef level or higher.
    • Fine dining, high volume experience necessary, Four Diamond restaurant experience preferred.
    • Direct experience in an organizational development role strongly preferred.

    Skills

    • Must be computer literate with working knowledge of Microsoft programs and other computer software.
    • Ability to work with mathematical concepts related to food and labor costing.
    • Ability to establish procedures for the effective implementation of the Director of Food and Beverage and Masselow’s Restaurant Manager’s directives.
    • Prepare complex reports, correspondence, charts, layouts, forms, handbooks, memoranda and other information and instructions.
    • Ability to analyze and solve complex management problems having non-standard solutions.
    • Ability to maintain effective working relationships with all levels of the organization and the public.
    • Skill in effectively, communicating information through verbal and written correspondence.
    • Skill in solving practical problems and dealing with situations where only limited standardization exists.
    • Excellent organizational, communication and leadership skills.
    • Knowledge of principles and practices of general business administration including personnel practices.
    • Skills in assessing operation, program, staffing and fiscal needs.
    • Skill in identifying and resolving administrative problems under pressure conditions.

    Other Requirements

    • Ability to obtain and maintain a Tribal Work Permit.
    • Valid health card.
    • Provide and maintain a valid SERV Safe Certificate upon hire. Have up to six months after hired to provide a valid certificate.
    • Available and willing to work nights, weekends and holidays as required.
