Job Title: Executive Chef
Reports To: Director of Nutrition & Dining Services
Job Summary: Oversee all aspects of culinary operations, including food inventory and ordering, food preparation and service, utility service including trash/compost/recyclable removal, dishwashing, sweeping/mopping of floors. Work collaboratively with Director and Clinical Nutrition Manager to ensure patient meals meet nutritional guidelines of prescribed diets. Write and cost menus for catering events. Be a representative for Cayuga Health System at community events for which CHS is a sponsor. Provide exceptional food and service to all patients, visitors, guests and employees, while meeting all regulatory requirements put forth by local, state and federal agencies.

Job Responsibilities:
1* Training and supervision of all production and utility personnel
2* Recipe development including food cost analysis for patient meals, retail outlets and catering.
3 Adherence to all local, state and federal safety and sanitation codes
4 Maintain all food production and storage areas in inspection-ready conditions through use of detailed cleaning schedule.
5 Manage Catering functions
6 Menu development and implementation
7 Effective Communication and demonstration of team-based management.
8 Manage inventory, ordering and storage of food and food service products.
9 Assist additional system locations, as needed, with menu development, training, catering events, etc.
10 Is flexible in assuming other appropriate responsibilities, not noted above.
Monday through Friday with weekends and holidays, as needed.
Requirements
Education - Bachelor's degree in Culinary Arts or Food Service Management, or 2-year related degree with 4 years of culinary supervision experience
Experience - A minimum of 5 years of experience with at least 2 at a supervisory level.
Licensure - ServSafe. CCC, CEC, CDM, CFPP preferred.
Physical Requirements: Standing for long periods of time, lifting up to 50 pounds, sitting, pushing, pulling and reaching. May be exposed to areas of extreme heat or cold. Primary work location may include loud noises, wet and slippery conditions, exposure to sharp objects. A licensed ability to drive may be necessary.
