Executive Pastry Chef - Casino jobs in Sacramento, CA

Overview

At least 5 years of culinary experience in gourmet, retail or casino/resort bakery. To be able to work with extended menu, production, pastries, cakes, oven temperatures and mixes. Also to be able to work side by side with bakers and cake decorators. Some computer knowledge is expected and also to assist the Executive Pastry Chef with such duties as scheduling, ordering, production list, payroll and sanitation policies and procedures.

Essential Functions

• Responsible for practicing, supporting, and promoting Thunder Valley Casino’s “Winning Attitude” Company-wide culture and demonstrating Thunder Valley Casino’s AAA Four Diamond Service Standards at all times.
• Properly rotate products in all freezers, storerooms and cold boxes.
• Must be able to identify different product such as flour, sugar, and chocolates.
• Must be familiar with the last minute orders, last minute banquets, etc.
• Must be able to make any regular cakes, from mixing, baking and decorating, along with cream pies, desserts and retail pastries such as cream puffs, éclairs, fruit tarts, etc.
• To be able to make any kind of wedding cake, including rolled fondant, with different kinds of icing such as cream cheese, butter cream, whipped cream and sugary icings.
• Ability to make different types of bread, including dinner rolls, French bread, Italian  bread, muffins, and any different types of breakfast pastries.

Minimum Qualifications

• Ability to communicate effectively with Guests, Team Members and Management in both written and verbal form.
• Ability to work with equipment, such as mixers, oven, microwave , etc.
• Know proper rotation procedures, including but not limited to the first in/first out (FIFO) method.
• Prior experience working in a union environment.
• Must have basic math skills.
• Possess or obtain a California Food Handler Card.
