Develops and tests recipes and sources ingredients to create unique pastries and baked goods. Being a Executive Pastry Chef creates dessert menus that complement meal offerings, appeal to diners and maximize profits. Follows all applicable guidelines and regulations for food handling and safety. Additionally, Executive Pastry Chef maintains a clean and orderly workstation and kitchen equipment. May require an associate degree in culinary arts or equivalent. Typically reports to an executive chef. The Executive Pastry Chef supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be a Executive Pastry Chef typically requires 3 years experience in the related area as an individual contributor.     Job Summary
    We are seeking a Pastry Chef to join our team! In this role, you will prepare a a variety of flavors for our doughnuts as well as decorate them! The ideal candidate has previous bakery experience and a passion for developing innovative doughnut offerings. If you are creative, hardworking, and want to share your tasty creations with customers, we’d like to hear from you!


    Responsibilities: 
    • -Preparation of baked toppings for the day
    • Decorating doughnuts according to the current menu
    • Understanding the breakdown of doughnut quantities needed for each Rocco's location
    • Understanding the store delivery schedule and driver's schedule to ensure doughnuts are ready to leave promptly at the set time.
    • Executing catering & special orders including but not limited to: Giant doughnuts, Mini Doughnuts, Small Doughnuts, Platters, Custom Orders
    • Being able to maintain the decoration pace and flow. It's all about efficiency here!
    • Need to have a thorough understanding of Rocco's standards for: Glaze, Frosting Consistency, Baking Temperatures, Dough Shape and Texture, and Visual Aesthetics
    • Willingness to collaborate on doughnut ideas and bring new flavor profiles to the Rocco's menu
    • Helping BOH Manager with FIFIO'ing throughout the week to ensure product freshness for BOH refrigerator, glazes, topping, and dry goods
    • Develop new and innovative recipes 
    • Clean and sanitize equipment and baking areas
    • Prepare custom orders
    • Track, maintain, and order inventory as necessary  
    • Supervise pastry assistants and bakers

    Qualifications
    • Previous experience as a baker, pastry chef, or in a similar role is preferred 
    • Ability to use professional-grade kitchen appliances and equipment
    • Knowledge of gluten-free baking a plus , and other ingredient limitations
    • Knowledge of food safety practices
    • Previous experience decorating desserts
    • Ability to thrive in a fast-paced kitchen environment
    • Strong organizational and time-management skills
    • Team player with strong leadership skills
    • Available for early morning shifts
