    Job Summary:

    The Pastry Chef will ensure the highest quality preparation and presentation of fine pastries in all Spanish Bay outlets and for banquets and special parties.

    Essential Duties & Responsibilities:

    • Oversee the design, production, quality, quantity, and freshness of items made in the pastry and bake shop.
    • Responsible for the set-up of pastry and dessert items served at banquets.
    • Collaborate with Chef de Cuisine’s on Restaurant dessert ideas.
    • Observe and enforce the objectives, policies, and standards of quality set forth by the executive chef.
    • Provide staff and executive chef with appropriate recipe cards of all food produced in pastry and bake shop.
    • Prepare daily food orders.
    • Approve special items before service.
    • Ensure the cleanliness and order of pastry shop.
    • Review employee Kronos time detail on a regular basis for accuracy and completeness.
    • Assist the executive chef with a weekly schedule for cooks in accordance with business needs, avoiding over staffing and overtime.
    • Schedule employee breaks in accordance with company policy.
    • Prepare and submit daily requisitions.
    • Train all pastry and bake shop employees in their individual duties, required knowledge and skills.
    • Counsel, discipline and evaluate pastry and bake shop employees.
    • Complete employee performance reviews.
    • Check completeness of mise en place of each station before service.
    • Maintain schedule of pastries.
    • Control waste and spoilage through constant attention to detail.
    • Assist in periodic menu review and revisions.
    • Prepare pastries and baked goods.
    • Report any faulty equipment or unsafe conditions directly to the Engineering Department.
    • Communicate effectively with staff from both the front and back of the house.
    • Comply with all Pebble Beach Company safety and health policies and procedures.
    • Assist with special events as needed.
    • Other duties as assigned by executive chef.

    Required Skills:

    • Graduate of accredited culinary program or apprenticeship under highly respected chef at a premier restaurant, resort or hotel property.
    • Excellent pastry, supervisory and sanitation skills.
    • Knowledge of all stations, plus experience with show pieces.
    • Broad knowledge of varied cuisines and ability to integrate regional ingredients to menus.
    • Able to perform demonstration cooking.
    • Ability to create decorative pieces in sugar, chocolate and pastillage.

    Desired Skills:

    • Certification by the American Culinary Federation and certification as a pastry chef preferred.
