Responsible for the deep cleaning of dining and kitchen items and areas. Assists with other cleaning duties as needed.
• Performs daily deep cleaning of all kitchen areas and equipment, which may include proper disassembly, soaking, scrubbing, and reassembly of items such as grills. • Replaces foil liners beneath all kitchen line equipment.• Cleans hot boxes and speed racks.• Deep cleans kitchen and dining floors and rubber mats by scrubbing and pressure washing.• Segregates compost items and recyclable materials to minimize waste; bales cardboard and utilizes a forklift as needed.• Keeps kitchen, food storage, cooking, preparation, and dining areas and equipment clean, sanitary, and in good working condition.• Keeps kitchen areas clean by washing down walls and work tables and wiping down refrigerators.• Keeps public areas of the dining facilities safe and free of obstruction; cleans up spills and removes any broken glass and materials.• May sort and wash soiled dining and kitchen items, including, but not limited to, plates, bowls, flatware, glassware, china, pots, pans, hot pots, etc.• May sort cleaned dining and kitchen items in order to replenish carts and food service lines at various establishments.• Complies with departmental standards in regards to cleaning policies and procedures.• Ensures compliance with federal, state, and local food safety regulations.• Sweeps and mops kitchen area and floors.• Sorts and washes soiled dining and kitchen items, including, but not limited to, plates, bowls, flatware, glassware, china, pots, pans, hot pots, etc.• Ensures waste receptacles are emptied to maintain clean dining and kitchen environments.• Supports back of the house Team Members as needed.• Performs other duties as assigned.
• High School Diploma or GED Certification preferred.• Previous dishwashing, stewarding, or related experience.• Ability to operate dishwashing machines.• Ability to operate pressure washing equipment.• Forklift certification preferred.• Basic English reading, writing, and conversation skills.• Must be able to read labels, ingredients, and instructions, and write basic lists, notes, and directions; able to converse effectively with co-workers and understand directions.• Knowledge of cleaning detergents, chemicals, and washing equipment, and the proper safety procedures for their use.• Must be able to work at a fast pace and maintain composure during periods of high activity.• Must follow safety guidelines and grooming standards.• Must obtain food handler card within 30 days of employment.• Willingness to work swing and/or graveyard shifts, as well as flexible schedules and hours, including nights, weekends, and holidays.• Must apply for, receive, and maintain a Gaming License from the Tribal Gaming Agency.• Native American hiring preference applies.
