The Director of Food and Beverage directs and supervises all aspects of the Front of the House and Heart of the House related to our Food and Beverage operations. The areas include The Strand Bar & Grill, The Corner Store, In Suite Dining, Banquet Events, Pool and Beach F&B, and Tambourine Room by Tristan Brandt.
Essential Job Functions
- Direct and oversee recruitment and development of employees; hire, train, coach and counsel, performance reviews, retention and terminate, as appropriate.
- Develop and recommend the budget, concepts and objectives and manage within those approved plans.
- Develops, plans, and implements food and beverage experiences for the outlets.
- Works with staff to ensure food and beverage quality standards, service, Forbes standards, cleanliness, and Carillon Miami Wellness Resort Service standards are achieved.
- Maintains communication with all departments to ensure customer service needs are met.
- Ensure product delivery meets the highest quality expectations across the food & beverage outlets.
- Oversee all required month-end inventories, accruals, and reports.
- Coordinate day-to-day operation of the outlets through the leadership team.
- Responsible for short and long-term planning and the management of the hotel’s front of house/heart of the house F&B outlet operations.
- Implement and maintain food & beverage sales/marketing programs and attendance to meetings.
- Direct the implementation of the payroll, reports, forecasts, inventory, and budget for outlet operations.
- Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality.
- Implement policies and procedures as required to increase guest and employee satisfaction.
- Develop and maintain open and engaging relationships with other departments.
- Perform daily walk-through to ensure full compliance with Department of Health regulations.
- Perform any other job-related duties as assigned.
Education, Experience and Skill Requirements
- Food Handler Manager certification.
- Proven successful track record of at least 5 years of managing in 4- and 5-star food & beverage operations.
- Experience in a high end/luxury condo-hotel and/or Spa environment preferred.
- Excellent communicator both written and verbal. Bi-lingual (English/Spanish) preferred.
- Outstanding team leader, ability to build and motivate a cohesive team. Participative, hands-on approach. Not an office only job.
- Result driven, well organized and detail oriented. Well versed in all aspects of discreetly catering to the highest demands of high profile and powerful clients.
- Must possess excellent interpersonal, communicational, and business skills, be guest service oriented, and be able to manage a diverse group of people.
- Calm and courteous in demanding situations, must enjoy working with people.
- Experienced in developing and implementing quality assurance programs of the highest level.

- Must be able to maintain a flexible work schedule, including evenings, nights, and weekends.
- Working experience in the Greater Miami and Beaches Hotel Association preferred.
