These positions are responsible for food production lead work. General responsibilities include: the preparation & distribution of food, including special diets, for the inmates & staff of the institution; maintenance of a safe & sanitary food service area; care for & clean kitchen equipment; plan meals & procure supplies; maintain food inventory; maintenance of security in the food service department; and training of new inmate workers & food service staff in all facets of operation.
