Performs a wide variety of duties in the daily management/supervision of the department including coordinating all activities of the department, daily supervising the planning, preparation and serving of patients, cafeteria and catering meals, establishing and implementing policies and procedures and assuring compliance with standard practices and regulatory requirement.
High school diploma or GED. Previous management and food and nutrition serivces experience. ServeSafe certification required or received within 90 days of hire. Utilizes a variety of food service equipment, both large and small equipment. These include food slicers and processors, ovens, fryers, steamers, refrigerators, freezers, dish machines, and floor cleaning machines. Also utilizes a variety of standard office equipment as needed.
Involves standing, bending and walking most of the shift. Must be able to perform normal duties of dietary manager. Subject to fluctuations in temperature and humidity. Subject to slips, falls, cuts, burns and electrical shock when utilizing equipment. Subject to muscular stain due to minor lifting. Works in a well lighted, ventilated food service area. Must be able to work with a high degree of accuracy in stressful situations. Must be able to effectively delegate tasks to subordinates and utilize staff to achieve maximum performance to maintain high standards of performance for the department. Must possess effective written and verbal communication skills. Must be able to work irregular schedules, holidays and weekends due to staffing fluctuations.
