POSITION SUMMARY:
The Director of Food & Beverage is responsible for the strategic direction of the Food & Beverage Department in a casino operation. This position will ensure the delivery of high quality food and beverage products and exceptional service in multiple outlets. As a member of the executive team, this position works proactively with all departments to grow the market, while sustaining high levels of employee and financial performance.
ESSENTIAL FUNCTIONS:
Ensures the smooth operation of a fast-paced, multiple-outlet food & beverage department, including two restaurants, a buffet, a snack bar, catering and bar service.
Provides financial analysis and performance evaluation on each of the outlets on a regular basis.
Creates effective cost control measures and standards to manage business levels and create a quality experience for guests consistently. Ensures that all areas are complying with controls and standards, responds quickly to remedy areas that need attention.
Develops an annual business plan for the Food and Beverage operation, identifying goals, growth drivers, food quality and service targets.
Creates and manages the Food and Beverage annual budget, provides monthly variance reports and quarterly reviews with the Executive Team and the Economic Development Committee of the Tribe.
Partners with the Marketing Department to create strategies to drive business through the casino by utilizing the food and beverage venues and increase market share.
Creates an environment where employees are engaged, challenged supported, and productive. Assesses staff and promotes development as a priority.
Promotes the highest degree of guest satisfaction, ensuring consistent quality controls are in place, and providing timely feedback and recovery systems.
Directs the Food and Beverage management team to hire effectively, plan and assign work appropriately, promote positive employee relations through timely employee performance evaluations, positive rewards and discipline; addressing complaints and resolving employee issues quickly.
Assures staff is certified in sanitation and safety techniques and complies with all sanitation procedures and laws.
Negotiates items and prices with vendors ensuring profit margins are within acceptable levels. Work with Purchasing Manager to coordinate purchasing, receiving and rotation of stock.
Creates and costs menus for all food service venues.
Develops procedure manuals for the Food & Beverage Operations to improve processes and consistency.
Performs any other duties as assigned.
EDUCATION:
A Bachelor’s degree in Business or related field from a four-year college or university; a combination of education and experience may be considered.
TRAINING AND/OR EXPERIENCE:
A minimum of five years of progressive Food and Beverage management experience (including both front of the house and back of the house operations experience) in a casino operation.
