Job Description
The Head Chef is responsible for overseeing all kitchen operations for Alibi Incline Public House. The chosen candidate will create and prepare unique recipes in accordance with Alibi company goals and guidelines. They will manage high level inventory, ordering, staffing and other kitchen finances. The ideal candidate is enthusiastic, knowledgeable, and passionate about craft beer and food. This position is a full-time, year-round position. Compensation is based on experience. PTO and health insurance are available.
Duties and Responsibilities
*Personally uphold and exemplify Alibi's Core Values. *Create and develop regular, rotating, and modified menu items to keep food menus fun and exciting for the guest within Alibi’s brand and overall vision for success. *Regularly meet and work with the General Manager and other chefs within Alibi to create a shared future vision, discuss timely goal execution and provide updates on the progress of the food program. *Uphold Alibi’s culinary standards by maintaining recipe books and ensuring recipes are followed by the culinary team for consistent food quality and appearance. *Hands-on involvement in cooking, overseeing production, and daily food service. *Menu planning and preparation for off-site catering and in-house special events. *Work with the General Manager to hire and schedule culinary staff appropriately through seasonal business trends. *Train, cross-train, and maintain a team of line cooks, prep cooks, and dishwashers that execute timely, safe, and to-order food for dine in and take out orders. *Maintain necessary food safety certification at a manager level. Uphold food preparation standards for the entire culinary team in accordance with current applicable HACCP policies and procedures, and federal, state, and local laws and regulations. Ensure the restaurant complies with health and sanitation regulations and procedures. *Instruct and train kitchen staff in safe food handling, safe operation of equipment, allergen awareness and sanitation based on company and regulatory standards. Ensure proper preparation of meals requiring allergen or dietary restrictions. *Maintain a cleaning and maintenance checklist and schedule for the kitchen, including kitchen storage areas and kitchen equipment. Assist in the cleaning and sanitizing of workstations and equipment, as needed. Coordinate kitchen deep cleaning schedule. *Maintain positive team culture through consistent feedback and leadership. Recognize, celebrate, coach, mentor, and provide disciplinary action to culinary team members within Alibi guidelines. *Manage orders and maintain inventory of food and non-food supplies to maximize freshness, limit excessive inventory while assuring product is readily available. *Maintain food costing and inventory management systems for all products and recipes. Order, receive and inventory food and supplies in accordance with the inventory management system. Maintain up to date food pricing across menus. *Perform other duties as assigned.
Qualifications
Required:
*Three to five years of progressive culinary/kitchen management experience *Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation *Experienced with computers; to include Microsoft Office, Outlook, Google Drive, Email and Food Management Programs *High volume foodservice operations experience *ServSafe certified *Ability to maintain a positive attitude in fluctuating work environment *Genuine desire to learn and grow, accepts feedback and seeks improvement *Maintains a professional relationship with all coworkers, vendor representatives, managers, customers, and client representatives *Ability to work a flexible schedule; able to work nights, weekends and holidays *Presents self in a highly professional manner to others; exemplifies Alibi’s core values
Preferred:
*B.S. Degree in Culinary Arts, Food Services Technology/Management/or related field; or A.O.S. Degree in Culinary Arts with additional specialized training *Prior head chef experience *Craft beer knowledge and appreciation. Takes initiative for self-development in the areas of craft beer; i.e. certifications in a related industry such as Cicerone. *Prior experience with MarketMan, Quickbooks and/or Homebase *Catering experience
Working Conditions & Physical Requirements
*Able to work in a fast-paced environment. *The noise level in the work environment is usually moderate to loud. *Varying schedule to include evenings, holidays, weekends and extended hours as business dictates. *Must be able to lift 50 lbs. *Must be able to stand, sit or walk for extended periods of time. *Possesses professional appearance and demeanor.
The selected candidate will be required to pass a post offer, pre-employment background check. Must obtain Alcohol and Food Serving Certification. To work for Alibi Ale Works, candidates must be a minimum of 21 years of age.
Available shifts and compensation: We have available shifts all days of the week. Compensation is $30.00 - $38.00/hour.
