Dedalus is looking for an artisan Market Associate to manage our specialty foods area including our full service Cheese & Charcuterie Counter. We are one of the country’s leading independent bottle shops. We take great pride in our curated offerings and aim to be a true champion for growers, craftspeople, and terroir. Our artisan food selection is made up of the best cheese, charcuterie, conserva, and pantry items all selected for their stylistic and regional compatibility with wine.

The ideal candidate is a real food and cheese nerd with a deep love for telling stories. They are interested in charcuterie, conserva, moustarda, and olive oil. They have a working knowledge of wine and a willingness to learn. This person will also be wired to thrive in a fast-paced and adaptive startup environment that demands creativity. They will also know how to do the stuff that keeps a business humming. Like scheduling, training, pricing and inventory management. This is an opportunity to shape a platform - a place to show the world what you love about eating and drinking, about how bread should be broken and what should wash it down.

A Few Must Haves:

• The ability to communicate in person and in writing.
• Relationships with cheesemakers, importers, and distributors.
• Stories and experiences to communicate - related to cheese, its geography and the people who make it.
• A need to provide excellent hospitality to our guests.
• A passion for sales - food and wine sales - the best kind of sales.
• A cheese/food life that extends beyond your work life. Writing, blogging, tasting, classes, apprenticeships, etc.
• An drive to learn about cheese, wine, and the business that makes these things a part of our lives.
• The capacity to teach out customers and team about cheese in small and large format tasting and class environments.
• The ability to work clean - as in super clean. And the ability to inspire others to do it too.
• A working knowledge of health standards and quality control.
• An understanding of buying, pricing, and inventory control.
• Proficiency with cheese tools, wires, knives, etc.
• Experience breaking down whole wheels of Comté and Parmigiano Reggiano.
• The ability to display cheese effectively, merchandise it in the shop, and build effective sampling stations.
• An eye for the details - perfect, tight wrapping, neat signage, accurate pricing.

Additional Requirements:

• A friendly, outspoken demeanor.
• A cheese background.
• Experience cutting, weighing, wrapping and packaging products in a full-service environment.
• Able to work weekends, nights, and holidays.
• Wine knowledge is a plus.
• Ability to read and write the english language.
• Ability to lift 40 lbs.
• Knowledge of basic arithmetic.
• The ability to work autonomously but within the confines of our brand.
• A sense of urgency and commitment to deliverables.
• The ability to manage multiple priorities, inputs, and to meet aggressive goals and timelines.
• The ability to work in a team sales environment.
