Pastry Chef
Position Summary
The Pastry Chef is responsible for overseeing the daily preparation, production of food items for service in the Market cafe and in the Restaurant. The Pastry Chef is to ensure the proper execution of menus, ordering of product and upkeep of daily organization of the pastry kitchen. In addition to playing a large part in the actual production, the Pastry Chef is to ensure the quality of product executed by the assistants/ bakers they are overseeing. The Pastry Chef is expected to develop an understanding of food cost and labor cost and how it reflects in the daily production of their direct reports.
Key Responsibilities
Supervise Daily Operations:
- Effectively open and close physical plant/effectively set up & break down production while ensuring a clean, beautifully, maintained department
- Hold employees accountable for effectively completing their position’s specific job responsibilities according to Kitty’s service and hospitality standard
- Informing the Executive chef immediately if problems arise with quality or staff. Resulting in Executive Chef rectifying the issue promptly
Food Service:
- Follow all recipes, and presentation specifics as set forth by Executive Chef/ Culinary Director
- Effectively prepare all required products in a timely manner for specific service period.
- Follow proper presentation and set up for all products/dishes
- Ensure consistency with our standard portion sizes, cooking methods, quality standards and kitchen rules.
- Effectively communicate errors/ inconsistencies etc. to teammates and expeditors and correct the problem immediately
- Ordering of all product and execution with scheduled events/ orders
Prep and Kitchen Organization:
- Follow all opening/closing kitchen procedures
- Set up station according to Chef/Kitchen guidelines
- Compiling weekly production sheets, basing off BEO’s and weekly inventory sheets and updating daily
- Oversee that Baker and assistants/cooks stock and maintain sufficient levels of food products at stations
Safety and Maintenance:
- Prepare all food according to Food Handlers Guidelines
- Handle, store, and rotate all products according to proper FIFO procedures
- Understand and adhere DOL and DOH safety and sanitation standards when cleaning and maintaining the kitchen
- Properly use and maintain all kitchen equipment
- Maintain a clean and stocked workplace, kitchen area, storage area and walk-in
- Track and report any food waste

Minimum Qualifications
Relevant Skills, Knowledge & Ability
- 3 years Pastry experience -Experience in production baking and working efficently
- Understanding of professional cooking and knife handling skills
- Knowledge and understanding of safety, sanitation and food handling procedures.
- Understand & follow written and verbal instruction & direction

Education/Certifications:
- ServSafe ServSafe Manager Certification
Work Environment:
- The ability to regularly reach with hands and arms, climb, balance, stoop, kneel, and walk up and down stairs.
- Repetitive hand or arm motions.
- Lifting and/or moving up to 20 lbs regularly; occasionally lifting and/or moving up to 50 lbs.
- Standing or walking for up to 12 hours at a time.

Pay: $70,000.00 per year
