Regional Chef plans and creates new menu items for multiple restaurants in a region. Trains unit chefs in meal preparation methods, portion size, and nutrition. Being a Regional Chef negotiates price and purchases food and restaurant inventory items in bulk. Requires a bachelor's degree in area of specialty. Additionally, Regional Chef typically reports to top management. The Regional Chef typically manages through subordinate managers and professionals in larger groups of moderate complexity. Provides input to strategic decisions that affect the functional area of responsibility. May give input into developing the budget. The Whitney Academy, Inc. is a unique, Joint Commission accredited, residential treatment center, serving adolescent boys with cognitive delays, psychiatric diagnoses and behavior problems. Individuals in this position provide direct services and create a positive difference in the lives of children with special needs.
The Chef is responsible for all food service activities for the agency including, but not limited to distribution of food items to Whitney Academy’s four community residences, menu adherence, portion control and the preparation of special diets as specified by the dietitian and/or physician. This is a “hands-on” position with the chef involved in all aspects of food preparation. As such, the chef must be competent in “all stations” within a restaurant kitchen. Whitney Academy’s food service program would be best described as a “banquet operation” serving 65 students with special orders. For the most part, Whitney does not use pre-prepared foods.
