Sommelier manages the daily activities necessary for maintenance and promotion of the organization's wine collection. Identifies and purchases wines for the organization. Being a Sommelier monitors the conditions of the wine cellar, ensuring optimal storage. Works with the kitchen staff to develop food and wine pairings. Additionally, Sommelier recommends and serves wine to guests. May require an associate degree or equivalent. May possess or be working towards certification. Typically reports to a head of a unit/department. The Sommelier works independently within established procedures associated with the specific job function.     What you’ll do:
    The Brass Tacks

    Restaurant Management

    • Oversee day-to-day operations, in partnership with the Restaurant General Manager
    • Work with the Restaurant General Manager and our Chefs to manage menus, inventory, ordering and costing.
    • Set and maintain a high bar for hiring front of house staff who are passionate about food, wine, and guest experience.
    • Define proper service etiquette for service team, motivating and actively coaching team members to deliver an exceptional guest experience.
    • Invest to enhance server culinary competence and table-side sales skills and confidence. Establish and maintain related and supportive testing programs.
    • Coordinate schedules to cover hours of service while being responsibly frugal with labor during seasonal or weekday lulls.
    • Manage all aspects of the floor, assigning tables, creating an efficient flow for both front and back of house.
    • Work in tandem with hotel management team to set and achieve financial targets.
    • In coordination with other F&B program managers, conduct annual performance reviews / OMG check-ins with all year-round front of house staff.
    Wine Program Management

    • Leadership of beverage program – wine, cocktails, cordials, mocktails, mixers, beer.
    • Oversee purchase and procurement, ensuring representative mix of varietals, regions, styles, and price points.
    • Author and manage wine and craft cocktail list development and pricing strategy. Build list with intention to stand above and apart from local competitors and that will garner Wine Spectator and other relevant recognition over time.
    • Invest in building relationships across the industry, beginning with local and regional providers.
    • Collaborate with culinary and management team to establish, design, and execute wine dinner programs and pairings.
    • Consistently invest in developing your own and team member wine, spirits, and cordial knowledge via both formal and informal training.
    • Ensure handling and storage of wine inventory is proper and includes important controls.
    • In coordination with F&B leadership, conduct yearly performance reviews with all year-round front of house staff.
    • Promote staff cross training and utilization to increase efficiency.
    • Contribute to planning for and developing a marketing strategy that targets our clientele and draws new customers to our outlets.
    • Work in tandem with Restaurant GM to accomplish financial excellence.
    The Nitty Gritty

    • Prior restaurant managerial experience.
    • Extensive wine knowledge. Sommelier certification highly desired.
    • Seasonal beverage menu development.
    • Implementation of service staff and bar etiquette and standards.
    • Oversight of all bar programming and events.
    • Vendor and rep relationship management.
    • Willingness to work hours and day parts required to operate restaurant outlets.
    • The ability to read, write and speak English fluently is required to read, analyze, and interpret regulations. Ability to effectively present information and respond to questions from a group of managers, clients, customers, and the public.
    • Microsoft Office products and operational knowledge of point-of-sale systems.
    • Must be flexible and able to perform multiple tasks and work in stressful situations
    • Ability to create a team environment within and across departments.
    • Strong computer literacy in Microsoft Office, especially Word, Power Point and Excel.
    • Strong general management skills, including time management, information analysis, planning and organizing, decision making, problem solving, and delivery of results.
    • Strong financial management skills, including budget management, expense control, forecasting, and analysis of financial statements.
    • Strong people management skills, including coaching, motivating, delegating, scheduling, and relationship-building.
