  • JOB SUMMARY:

    The Kitchen Supervisor is responsible for the efficient operation of the casino cafe as well as to provide prompt and courteous service to all our guests. This position also directs and supervises all activities and functions of the day to day operation of the Kitchen Department. All functions will be performed within the guidelines of the Coyote Valley Casino policies and procedures, Internal Control Standards and objectives, and in accordance with the Mission, Vision and Values Statements of the Coyote Valley Casino.

    ESSENTIAL FUNCTIONS AND RESPONSIBILITIES This list of tasks is illustrative ONLY and is not a comprehensive listing of all functions and tasks performed by positions in this class. It does not imply that all positions within the class perform all of the duties listed, nor does it necessarily list all possible duties that may be assigned.

    1. Must consistently demonstrate a high level of guest service to customers and

    employees, and represent the casino in a friendly and professional manner.

    2. Insure proper preparation of all food and beverages, employing absolute care

    To provide a healthful and clean environment throughout the Department.

    3. Prepares various food dishes in accordance with a prescribed menu.

    4. Instructs, develops and prepares specialty items as necessary to ensure

    constant variety.

    5. Reviews and implements recipes that complement the guest’s needs and

    directs cost and margin to reflect management’s requirements.

    6. Assists with cooking and preparation of food items when necessary.

    7. Develops and implements control of food inventories, supplies and equipment

    Providing the lowest possible cost of sales without sacrificing quality or

    Service.

    8. Ability to use an ordering guide based on the “Par” system with established

    usages, and expected variances due to casino promotions.

    9. Ensures that all food and beverage products served meet the established health

    specifications and standards.

    10. Ensures that the proper levels of service are provided based on forecasted needs

    and that the minimum level of labor is used to perform the required level of service.

    11. Maintains a neat, clean, organized, safe and comfortable environment for

    employees and guests.

    12. Established and maintains strict adherence policies throughout the department.

    13. Inspects all department facilities and equipment assuring proper condition and

    working order.

    14. Holds regular meetings with Back-of-House personnel for complete communication

    with employees and shift supervisors, including instructions on safety and proper

    food handling methods.

    15. Oversees training of all new Back-of-House employees and completes proper

    evaluation forms as required.

    16. Must be available to provide kitchen services for special events and casino

    promotions.

    17. Assists with effective recruitment, hiring, recognition, coaching, terminations and

    other personnel related issues.

    18. Communicate regularly with peer and subordinate supervisors regarding

    operational, business, policy, and staffing issues.

    19. Communicate regularly with employees and keep them informed on all casino

    activities and events.

    20. Ensure staff behavior and appearance is in compliance with established standards.

    21. Make recommendations to maximize the profitability of the kitchen operations.

    22. Ability to define problems, collect data, establish facts, draw valid conclusions,

    provide solutions and make recommendations.

    23. Must abide by the dress code maintaining the professional appearance of the

    casino at all times.

    25. Must maintain a good attendance record.

    QUALIFICATIONS/REQUIREMENTS:

    EDUCATION/EXPERIENCE:

    1. High School Diploma or GED equivalent. Trade school classes or culinary

    education preferred.

    2. Five (5) years restaurant industry work, including two (2) years progressive

    supervisory experience in food preparation in a chain restaurant.

    3. Possess or be able to obtain a Food Safety Certification from an approved program.

    4. Must demonstrate leadership, fairness and sensibility to the customers and

    employees.

    5. Must possess ability to instill a sense of pride and personal responsibility in

    subordinate employees.

    Language Skills:

    1. Ability to communicate effectively both written and orally.

    2. Spanish Bi-lingual strongly encouraged.

    Reasoning Ability:

    1. Must have the ability to deal effectively and interact well with the Guests and employees.

    2. Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.

    Physical Demands:

    The Employee is also regularly required to stand; walk; sit; and use hands to finger, handle or feel objects, tools or controls.

    Work Environment:
    The work environment characteristics described here are representative of those an Employee encounters while performing the essential functions of this job. The noise level in the work environment is usually moderate loud. When on the casino floor, the noise levels increase to loud. Must be able to work in an intense environment where a high degree of concentration is necessary to perform the required job duties.

    Other:

    1. Must be able to be approved for and maintain a valid gaming license.

    2. Preference in filling vacancies is given to qualified member of the Coyote Valley of Pomo Indian Tribe or qualified Native American candidates in accordance with the Indian Preference Act (Title 2, U. S Code).
